I love carrot cake. I am so glad I found a recipe that is everything I would want in a carrot cake, plus it is vegan :) I made these for a vegan potluck! Thanks to Astig Vegan (http://astigvegan.com/) for putting it together.

I changed a couple things, but I got the recipe here: http://www.naked-cup-cakes.com/2011/12/vegan-carrot-cake-cupcakes.html

Ingredients:

2/3 cup flour (i used whole wheat pastry)

3/4 tsp baking soda

1/4 tsp baking powder

1/4 tsp salt

1/4 tsp cinnamon

1/4 tsp ginger

2/3 cup sugar

1/3 cup vegetable oil (i used sunflower oil)

1/3 cup soy milk (or any non-dairy milk, i used coconut milk)

1 tsp apple cider vinegar

1 tsp vanilla

1 cup grated carrots

1/2 cup chopped raisins (i like to use dried berries)

1/2 cup chopped almonds (i added this ingredient, i grind them up in a food processor)

Preheat the oven to 350 and line you muffin pans with paper liners.

In a large bowl, mix together the non-dairy milk and apple cider vinegar and let sit for a few minutes to curdle and thicken up

Add the sugar, oil, and vanilla, and mix well

In a second bowl whisk together the flour, baking soda, baking powder, salt, and all spices

Mix the dry ingredients into the wet

Add the carrots, raisins/berries, almonds and mix until well distributed

Fill the prepared liners and bake for 26 - 28 minutes (regular cupcakes), or 12 - 15 minutes for mini cupcakes

Let cool before frosting

Enjoy!

Frosting:

Mix vegan cream cheese with confectioner’s sugar. I start off with 1/2 cup of each then add non-dairy milk if you need to thin it out.

Vegan Not-So-Red Chocolate Cake

I tried making red velvet cake with beets for natural food coloring but it still stayed brown. It turned out as a delicious vegan chocolate cake. (White Chocolate Chips are not vegan)

I used this recipe: http://thehungrydudes.com/the-best-red-velvet-cake-that-happens-to-be-vegan

Garden Fresh in Palo Alto

After a 3 mile run at The Dish, this place was perfect for lunch! My boyfriend and I ordered three dishes: Spinach Wonton Soup, Walnut Prawns, and the veggie ribs. All very scrumptious! We even got a free bowl of corn and tofu soup!

Spinach Wonton Soup:
it has been years since I had wonton soup and this hit the spot for me! The wonton was full of “meat” and the soup very flavorful.

Walnut Prawns:
WOW! I am allergic to shellfish, so this dish was heaven for me. The “prawns” were dipped in a thin batter, not too heavy with the perfect mixture of veganise. The walnuts.. delicious, crunchy, and sweet! I would definitely, always order this dish when I come here.

Veggie Ribs:
This was my boyfriend’s pick and he LOVED it (for a meat eater). I am just amazed on how they got the mushroom texture to taste, feel, and look exactly like ribs. The black bean sauce complimented the “ribs” very well.. every bite was tender!

The staff was also very friendly. It seems like a family owned restaurant. I will be coming here whenever I am in town. It’s a perfect meal before grabbing Sprinkles Cupcakes ;)

Chantal Guillon Macarons

BEST FRENCH MACARONS EVER.

Every bite I take is mouth-watering heaven with my taste buds dancing with excitement. Everything is just perfect! I love the texture and how each flavor taste like I’m biting into the actual ingredient. I’ve tried most of their flavors, and the only ones that don’t appeal to me are the flowery ones.. but the rest are amazing and deserve to be eaten slowly… making each bite and second worth it. The outer part has a soft crunch to it, then the middle is a creamy filling that bursts into your mouth! All you really need is just one to satisfy a craving or sweet tooth. Trust me… it will make you happy!

These are the flavors that I enjoy:

Pistachio: My absolute favorite. I always get this flavor every visit. It’s full of nutty flavors and taste like real pistachios.

Hazelnut: Yum! It’s like I am biting into a Ferrero Rocher.

Passion Fruit: The orange color is so pretty and has the tangy, sweet fruity flavor.

Dark Chocolate: Rich and chocolatey

Lemon Coconut: This one is a little unique, with an open-face top of marshmallow fluff and coconut shavings on top. A nice little fluffy, crunch when you bite into it.

Lemon: I love the lemony, tangy taste.

Jasmine Green Tea: Some places where I order green tea flavored things, there is no taste but here it has a good amount of matcha that is satisfying

Spiced Macaron (forgot the name): Delicious! They had my friends and I sample it while we were at the shop and I loved how the different spices kicked in your mouth.

Flavors that are so-so:

Orange Blossom: A little hint of orange, but not much flavor to it.

Almond Amaretto: The amaretto is way too strong and overpowering.

Red Velvet: I think I prefer this as a cupcake. There is something missing in the macaron and lacking that “red velvet” kick

Some Champagne Flavor: Ick.. i did not like it at all.. the alcohol content was too strong for me

Overall… this place has delicious macarons that makes you come back for more! They have some seasonal flavors, so there are always new flavors when I come in. You do save some money buy getting the box. The staff is super friendly and always have a smile on their face :)

I love love kale! It’s delicious, healthy, low in calories, and easy to cook! I eat these leafy greens every week and cook fairly quick. The photo shown is not the exact recipe I have listed here, but you can basically add any veggies you want together, and as much as you would like. Here is a simple recipe I usually use when cooking kale:

Ingredients:

2 cups kale

2 cups mushroom

2 cups spinach

1 cup tofu

1 tablespoon olive oil

1/4 cup of vegetable broth

Instructions:

1. Heat the olive oil in a medium sized pan in high-medium heat

2. Fry the tofu till they turn a light brown, occasionally flipping

3. Set tofu to the side, then saute the mushrooms

4. Add the tofu back in the pan

5. Add the kale and pour the vegetable broth, then stir

6. Cover for about 3-5 minutes until the kale shrinks and turns a dark green

7. Since spinach cook fairly quick, turn down the heat to medium-low and add the spinach till they start to slowly shrink

8. Serve with brown rice and enjoy!

Red Velvet Brownie Cookies

I also decided to make red velvet cookies for Valentine’s Day. As my previous post about the cupcakes changing color, for some reason these cookies turned brown instead of red, and I put the right amount of food coloring the recipe asked for. Here is where I got it from:

http://www.howsweeteats.com/2010/10/red-velvet-chocolate-chip-cookies-from-scratch/

They were delicious! I loved the moist and soft texture of the cookie, but it had more of a brownie. Again, everyone enjoyed them! I gave my friends four each in a bag, and they killed them in one sitting! I hope to make these again with the right color of red!

I LOVE BLOOD ORANGES! When they are...

Vegan Blood Orange Cupcakes

I LOVE BLOOD ORANGES! When they are in season, I buy two bags at a time at Trader Joe’s! I wanted to bake for my friends for Valentine’s Day and thought this recipe would be a good fit! I got the recipe from here:

http://shaunasever.com/2012/02/vegan-blood-orange-cupcakes.html

I ended up not making the frosting and used all white flour. It still turned out really good!

The only questionable thing is, why did it turn green? I noticed that after I mixed the dry and wet ingredients, the batter turned gray. Then, when I took them out of the oven, the cupcakes were green. I guess these work for St. Patrick’s Day too? Haha. Oh well.. they were still really delicious! My friends and mom enjoyed it. I liked it because it slightly had the taste of fruity pebbles.

Oatmeal Ricotta Biscuits (No Butter, No Egg) Recipe
I was bored...

Oatmeal Ricotta Biscuits (No Butter, No Egg) Recipe

I was bored one night and decided to bake with ingredients I had lying around the kitchen. I had some left over ricotta from making lasagna and an entire bag of granola, so I decided to make some Oatmeal Ricotta Cookies. I stumbled across this recipe: http://www.food.com/recipe/grannies-oatmeal-ricotta-bar-cookies-306187 and another (but forgot what it was)… I took what I baked out of the oven and instead of cookies, they had the texture of a biscuit. Here is what I did:

Ingredients:

1 1/3 cup Flour

1 2/3 cup Oats

1/2 cup brown sugar

1/2 cup sugar

1 1/2 teaspoons vanilla

1/2 cup fat-free ricotta cheese

1/4 cup coconut milk

2/3 cup canola oil

dash of cinnamon

Instructions:

Pre-heat oven at 350 degress

1. In a large bowl, mix together: flour, sugar, and oats

2. In another bowl, mix together: vanilla, ricotta, milk, and oil

3. Mix in wet ingredients in the large bowl of dry ingredients

4. Place about a spoonful of the batter on a cookie sheet then dash some cinnamon on top

5. Bake for about 20-30 minutes. Checking to see if it turns golden brown.

Calories: 94 per cookie

I really enjoyed these! So did the many people that got to try them. I was surprised by the outcome since they didn’t turn out to be cookies, but I am not complaining since they came out as delicious biscuits!

Spinach and Broccoli Nuggets
My boyfriend, Earl was craving for...

Spinach and Broccoli Nuggets

My boyfriend, Earl was craving for some veggie nuggets, so he searched and searched for a recipe… Then finally found one he liked. We adapted the recipe from here, added spinach, and took out the cheese: http://www.babyledweaning.com/recipes/lunchdinner/fionas-vegetable-nuggets/

Ingredients:

1 cup broccoli florets

1 cup spinach

4oz breadcrumbs

2 1/2 tbsp water

2 1/2 tbsp olive oil

1 1/2 tsp baking powder

Instructions:

1. Heat the oven to 375 degress

2. Cook the broccoli, drain, then blend

3. Blend the spinach

4. Mix the blended broccoli and spinach

5. Combine with the remaining ingredients and mix well

6. Form the mixture into nugget shapes and place on a greased baking tray, about 3 inches apart

7. Bake for 20-25 mins, turning halfway through the cooking time

8. 106 Powell StSan Francisco, CA...

SAN FRANCISCO BAKING COMPANY

106 Powell St
San Francisco, CA 94102

$1.25 per cookie

$12 for a Dozen

Saw this place as my family and I were walking down Powell. We noticed all the different shortbread cookies, which looks like exactly the ones from Hawaii! We got excited and tried the free samples. I tired the regular shortbread and the chocolate dipped with white chocolate… YUM! Then we noticed the regular cookies and decided to get a dozen to share. I got the cookies and cream, peanut butter, and chocolate chip. I was not a huge fan and I love cookies. They are very oily and I kept having to wipe my fingers on a napkin after every bite. Here is what I thought of the 3 cookies I had:

Peanut Butter:
This one was not as bad as the other two, but it was super crunchy. I like my cookies soft with a slight crunch but this one was just hard. But, it did have a yummy peanuty taste. I just did not like the texture and how oily it was.

Cookies and Cream:
Didn’t really have the “oreo” taste I was looking for. It just tasted like I was biting off sugar (which I know a cookie is, but it should have some flavor). Just to note, I am not a fan of this flavor at Anthony’s Cookies either… maybe it’s just me?

Chocolate Chip:
I love me some plain chocolate chip cookies, but these were not satisfying at all. So greasy and didn’t really have much taste. It was not as hard as the peanut butter, but the outside of the cookie had a slight crunch to it. I did like the huge chocolate chips in it and how soft the middle was.

I may not have enjoyed these cookies because I am a huge fan of Anthony’s Cookies, where peanut butter and chocolate chip cookies are WAY better! It may not have been fair that I was comparing them to Anthony’s Cookies, but overall I think you can get better tasting cookies at other places… even just getting a package of Toll House Cookies!

abonus:

For...

Homemade Granola with Almonds and Sunflower Seeds

For breakfast, I usually eat yogurt or oatmeal. I love adding granola to it and I figured… why not make my own? I really enjoyed this granola! It’s crunchy, tasty, and addicting! I need to slow myself down with eating too much of it because it’s so much calories.. but worth it!

Recipe was adapted by: http://budgetbytes.blogspot.com/2012/01/cinnamon-pecan-granola-615-recipe-062.html

I changed it up a little bit…

INGREDIENTS

4 cups rolled oats (Purchased a bag at Trader Joe’s, $3.99)

1 cup raw sliced almonds

1/2 sunflower seeds

1/4 cup Blueberry Flaxseeds

1/4 cup brown sugar

1/4 cup honey

1/4 vegetable oil

1 tsp cinnamon

1 tsp vanilla

1/2 tsp salt

DIRECTIONS

1. Begin by preheating the oven to 325 degrees. In a large bowl combine the rolled oats, flaxseed, and almonds. Stir until combined.

2. In a small saucepan, combine the honey, brown sugar, oil, salt, and cinnamon. Cook over low heat while stirring until the brown sugar is dissolved. Turn off the heat and stir in the vanilla.

3. Pour the honey mixture over the dry oat mixture. Stir well until all of the oats are coated (this may take a couple minutes of stirring). Pour the mixture out onto a baking sheet covered in parchment paper. Spread it out into an even layer.

4. Bake the granola in the oven for 30 minutes, stirring half way through. Keep an eye on the granola as every oven is different. If it begins to smell burned, remove from the oven immediately. You want the granola to toast, but not burn.

5. Remove the granola from the oven. Press the granola down to compress it on the baking sheet. This will help it form clumps as it cools. The granola will feel soft when it is hot, but will crisp up and become crunchy as it cools. After it cools, store in an air-tight container.

Thai Idea Vegetarian

710 Polk St
San Francisco, CA 94109

I love Thai Food! It’s probably my favorite type of food :) I finally got a chance to try this place out. I’ve read about it in articles and blogs, plus Yelpers praise this place!

I went with my boyfriend, Earl and even though he is not vegetarian, he does not mind eating fake meat and is always willing to try it (but this guy is a meat lover and probably would not turn vegetarian).

This place is really cute. It has a modern Thai ambiance. I like the pillows laid out on some sitting areas, plus I like the color decor of browns and greens. I really loved the tree art they had near the register… very cute!

I opened the menu and I was just overwhelmed by all the dishes and options! I wanted to order everything. After debating over what we wanted, here is what we ended up ordering:

APPETIZER - CRAB CAKES (Vegan)

We opted for the vegan, because Earl freaked when he heard the word “egg” (the one piece of food he hates). These were delicious! I never really had a crab cake in my life, since I am allergic to shellfish so I really can’t compare them to regular crab cakes. These were crunchy, had a slight “crab/fish” taste, and had a very flavorful sauce that went on top of the cakes. It also came with a few pieces of potato wedges on the plate, which was a little treat. Earl also enjoyed them and we devoured these really fast!

PINEAPPLE BROWN FRIED RICE

I do not eat white rice, so when I asked to substitute the fried rice with brown… I was glad that she was willing to do so! I did not want to just order plain brown rice, because the description of the pineapple fried rice sounded too good to pass up. The menu said: pineapple, chicken, shrimp, and some other veggies… but when it came out it the dish had other ingredients in it. As I mentioned, Earl hates egg, so we usually order fried rice without egg. We assumed that since the menu didn’t list egg, but it had it when we got it. Earl was really disappointed but sucked it up and still ate it. I think this partly ruined his dinner, and I felt bad but he insisted that we not order a plain bowl of rice since there was so much food. To me, it was good but something tasted a little off to me. I can’t really describe the taste but I did not like it and the taste kept creeping into my nose. I was drowning it with the curry to not taste it.

PUMPKIN CURRY WITH BEEF

This was yummy! Earl always orders pumpkin curry, so of course he had to get it here. I really enjoyed the crispy strips of sweet potato on top, plus this curry was full of flavors! I liked the texture of the squash/pumpkin, which was soft and mushy. The fake beef was good, but was a little too chewy.

AVOCADO SHRIMP PANANG CURRY

This is the dish I ordered and I thought the avocado complimented the curry really well! I was a little hesitant to order at first because I would never think about having avocado in my curry, but I loved it a lot. The shrimp didn’t really taste like what I remember shrimp to taste like, but I still enjoyed this dish.

As much as I enjoyed the food, I came to the realization that I prefer fried tofu in my curries over the fake meat/shrimp. I think sometimes fake meat can get too chewy for my liking and I think tofu soaks up the curry taste more. I look forward in going to this restaurant again and trying their other dishes! Next time, I will make sure to leave room for dessert because I was way too full!

I had some extra ricotta cheese lying around from a lasagna that I made, so I came across this recipe on the Food Network’s website and decided to try it out.

The ingredients and directions are listed here:

http://www.foodnetwork.com/recipes/giada-de-laurentiis/nonnas-lemon-ricotta-biscuits-recipe/index.html

I did some minor adjustments. I did not use almonds, instead I sprinkled some cinnamon on top :)

I ate one fresh out of the oven and it was delicious. It had a nice fluff with a lovely hint of lemon. I never thought of baking with ricotta cheese, but I must say it worked well and I look forward to making these for gatherings.

Multiple Locations in San Francisco

I just had lunch here and it was ok. Nothing special. I had The Parisian: Brie/Apple Butter on White Wheat and Creamy Wild Mushroom Soup. It was too salty for my taste and didn’t have much flavor, very bland. Also, the bread lacked the crunch I like when eating grilled cheese.

I recommend going to the American Grilled Cheese (http://theamericansf.com), their sandwiches are full of flavors and delicious! Also, Nordstroms Cafe’s grilled cheese is way better!

Crown and Crumpet

Ghirardelli Square
900 N Point St, Ste E207
San Francisco, CA 94109

I have always wanted to go to a tea place and thanks to Gilt City, I was able to try Crown and Crumpet. I’ve heard many good things about this place, read the amazing reviews, stared at the place while visiting Ghirardelli Sqaure… so I think it was time for me to finally check it out. I decided to take my boyfriend, Earl with me since he loves teas (he was kind of hesitant because he thought the ambiance was too much for women, but the sweetie that he is.. he still came along). I made reservations, as the voucher instructed me too, and right off the bat… they already had good customer service! The voucher was only redeemable from Mondays-Thursdays with the last sitting at 5pm. I end work at 5pm, so I told her that and she made an exception to let us come in at 6pm on a Friday. How accommodating! That made me really happy :)

We sat down near the tea bar (I want one for my future home). The Gilt City deal was an “Afternoon Tea for Two” which I purchased for $45. It is usually $26 a person, so I saved a few dollars. You get two selections of tea, two glasses of champagne, eight sandwiches, four scones, two crumpets, and eight sweet treats.

We were given the menu and told to choose two teas. I got Swamp Water (Mango, Pineapple, Passion Fruit) and Earl got Fig De Blanc. Since I am vegetarian and Earl is a meat eater, I requested to get half veggie friendly sandwiches. The food items are brought out on a cute tiered plate set.

TEA:

I really enjoyed my Swamp Water tea… don’t let the name fool you! It’s really delicious and you can really taste the bursts of mango, pineapple, and passion fruit. The reason for the name is that the tea turns green after it is fully brewed. Earl really liked his Fig tea, and I couldn’t taste much of the fig but he swore he did. I believe him. He is more of a fig eater than I am. You get a lot of tea in your one teapot. It was hard for us to finish it all because we were so full, but the two teapots of tea is probably good for like 4-5 people.

SANDWICHES:

I got an egg salad sandwich and a cucumber sandwich… both scrumptious! Though, I wish that I requested for wheat bread. The taste of white bread threw me off a little bit, because I haven’t had it in so many years. Earl had something with Chicken Curry and a Salmon sandwich, which he also both enjoyed.

SCONES:

Oh my… I fell in love with their scones, which are house made in their shop. We each got two scones, one had nuts and the other was plain, but both truly delicious and made my taste buds smile! I loved the buttery, soft taste in my mouth. It was very comparable to the biscuits at Brenda’s (that’s what I kept saying). Haha. I wish I could have these everyday of my life. It’s truly one of my favorites!

CRUMPET:

While I was eating a crumpet I realized, they are English Muffins! I don’t eat English muffins that often, so there wasn’t much I could compare it to. It tasted like bread with some fluff in it. I really enjoyed it with their house made lemon curd! Ahh.. it tasted like I was eating a lemon bar, and I am a girl that loves lemon bars. Wow.. simply wow. I should have asked if they sold jars of it because I would totally buy it (if it’s not overly expensive). Aside from the lemon curd, there was strawberry jam (Earl enjoyed) and clotted cream, which tasted like butter.

DESSERTS:

We got an array of four different desserts, with one of each for us to try. I don’t exactly know what they were, but all were really good. I think for every visit, there are different treats on these plates, so it’s constantly changing.

CHAMPAGNE:

And no… we did not get to drink that Hello Kitty Champagne in the photos. So sad. It was $58! But our deal did come with a glass of champagne. It paired well with our treats, since it was really sweet but I loved it :)

I recommend going to a place like this once in your life. It’s a nice, calm, relaxing ambiance. I definitely see myself going back here with some of my friends. Especially because of their scones and lemon curd! YUM!!!!

Oven Baked Onion Rings

I stumbled across this recipe on Post Punk Kitchen. Since Earl and I were making the Edamame Mushroom Pea Veggie Patty, we had to also make our favorite side dish… onion rings!! We copied the recipe, except substituted the bread crumbs for panko.

Please click on the link to follow the instructions:

http://www.theppk.com/2010/10/omg-oven-baked-onion-rings/

Ours did not turn out as dark brown as the one in the recipe, since I think we went with the panko, but it was still delicious! I was addicted to them and couldn’t stop eating them even though I was so full!

Vegan Edamame Mushroom Pea Veggie Patty Recipe
I love veggie...

Vegan Edamame Mushroom Pea Veggie Patty Recipe

I love veggie burgers! Whenever I am at a restaurant that makes their own homemade veggie patty, it’s always what I order. Earl mentioned how we should make our own, so I stumbled across this recipe on “Healthy, Happy, Life” (http://kblog.lunchboxbunch.com/2009/07/mean-green-edamame-soy-burger-spicy.html) and changed things up a bit to create it to our own liking.

This will create about 5 patties depending on how thick or thin you want it.

INGREDIENTS:

1 cups cooked edamame beans (1 frozen shelled bag at Trader Joe’s work great)

1 cup Brown Rice (which will be made to fried rice, used the microwavable package to save time with cooking the rice, unless you have some brown rice lying around)

1 tablespoon soy sauce

1 tablespoon lemon juice

1 1/2 cups mushrooms

1 cup frozen peas

1 cup sesame rice crackers

*Got all ingredients at Trader Joe’s

INSTRUCTIONS:

Boil water and cook edamame (follow directions on bag, takes about 10 minutes)

While you are boiling the edamame, fry the cooked brown rice. Add soy sauce to brown rice, mix, and cook for about 5 minutes.

Deshell edamame to 1 cup

Mix edamame and fried brown rice, then add 1 tablespoon of lemon juice, let it marinate for a few minutes

Cook mushrooms till they turn light brown

Microwave and heat up peas

Mix mushrooms and peas, then blend in a food processor

Take edamame and rice mixture, then blend in food processor

Blend crackers into fine crumbs (no need to clean each time you blend)

Combine veggie and rice mixture together

Fold in cracker crumbs to mixture

Use hands to form patties

Cook patty for about 2 minutes on each side on a olive oil greased pan

We are still trying to figure out how to keep the patty together, because it gets a little crumbly but still delicious and full of flavors!

Enjoy with wheat bread, pita bread, or burger buns. For condiments, we used: organic ketchup, pesto, and edamame hummus.
